1 handful of smoking wood

Ingredients:
– 12 chicken wings
– Sesame seeds for garnish
For the marinade:
– 60 ml soy sauce
– 2 tbsp rice vinegar
– 2 tbsp fish sauce
– 2 tbsp sesame oil
– 2 tbsp ginger paste or grated ginger
– 3 tbsp chopped garlic
For the sauce:
– 80 ml miso paste
– 60 ml soy sauce
– 60 ml fish sauce
– 60 ml sriracha sauce
– 2 tbsp rice vinegar
– 2 tbsp sesame oil

Instructions:

  1. Mix all marinade ingredients in a bowl.
  2. Pour the marinade over the chicken wings and let them marinate in the refrigerator for at least 6 hours (preferably overnight).
  3. Preheat the barbecue to 200°C and set up for direct cooking.
  4. Add the smoking wood and place the chicken wings on the grill.
  5. Grill until the internal temperature reaches 70°C (about 35-45 minutes), turning regularly and keeping the lid closed.
  6. Meanwhile, make the sauce: mix all ingredients and heat in a cast iron pan on the barbecue.
  7. When the chicken wings are done, place them in the sauce and make sure they’re completely covered.
  8. Garnish with sesame seeds and serve immediately.
