Ingredients:
– 12 chicken wings
– Sesame seeds for garnish
For the marinade:
– 60 ml soy sauce
– 2 tbsp rice vinegar
– 2 tbsp fish sauce
– 2 tbsp sesame oil
– 2 tbsp ginger paste or grated ginger
– 3 tbsp chopped garlic
For the sauce:
– 80 ml miso paste
– 60 ml soy sauce
– 60 ml fish sauce
– 60 ml sriracha sauce
– 2 tbsp rice vinegar
– 2 tbsp sesame oil
Instructions:
- Mix all marinade ingredients in a bowl.
- Pour the marinade over the chicken wings and let them marinate in the refrigerator for at least 6 hours (preferably overnight).
- Preheat the barbecue to 200°C and set up for direct cooking.
- Add the smoking wood and place the chicken wings on the grill.
- Grill until the internal temperature reaches 70°C (about 35-45 minutes), turning regularly and keeping the lid closed.
- Meanwhile, make the sauce: mix all ingredients and heat in a cast iron pan on the barbecue.
- When the chicken wings are done, place them in the sauce and make sure they’re completely covered.
- Garnish with sesame seeds and serve immediately.
