This grilled Caesar salad with chicken and chorizo is a flavorful twist on the classic. Everything comes from the BBQ: crispy chicken, spicy chorizo, and grilled romaine lettuce.

Ingredients:
– 4 chicken thighs
– Salt and pepper or favorite rub
– 1 chorizo sausage
– 1 ciabatta bread
– Garlic olive oil
– 4 romaine lettuce hearts
– 3 boiled eggs
– Caesar dressing
– Parmesan cheese
Instructions:
- Season the chicken thighs with salt and pepper or your favorite rub.
- Grill the chicken over medium heat with the charcoal basket halfway up the DTB Grill.
- Slice the chorizo and place it on the top grill rack.
- When the chicken has a nice color, move it to indirect heat and let it cook through slowly.
- Slice the ciabatta bread, drizzle with garlic olive oil, and grill until nicely browned and crispy. Then cut into chunks and place in a large bowl.
- Cut the grilled chorizo into pieces and add to the bowl.
- When the chicken is cooked, cut it into pieces and add to the bowl.
- Halve the romaine lettuce, drizzle with olive oil, salt, and pepper, and grill briefly over the fire. Then chop and add to the bowl along with the boiled eggs.
- Add Caesar dressing, toss everything well, and plate up.
- Finish with Parmesan cheese and serve immediately.
