This grilled Caesar salad with chicken and chorizo is a flavorful twist on the classic. Everything comes from the BBQ: crispy chicken, spicy chorizo, and grilled romaine lettuce.

BBQ Chicken Caesar Salad with Chorizo

Charcoal basket
Tongs and cutting board

Ingredients:
– 4 chicken thighs
– Salt and pepper or favorite rub
– 1 chorizo sausage
– 1 ciabatta bread
– Garlic olive oil
– 4 romaine lettuce hearts
– 3 boiled eggs
– Caesar dressing
– Parmesan cheese

Instructions:

  1. Season the chicken thighs with salt and pepper or your favorite rub.
  2. Grill the chicken over medium heat with the charcoal basket halfway up the DTB Grill.
  3. Slice the chorizo and place it on the top grill rack.
  4. When the chicken has a nice color, move it to indirect heat and let it cook through slowly.
  5. Slice the ciabatta bread, drizzle with garlic olive oil, and grill until nicely browned and crispy. Then cut into chunks and place in a large bowl.
  6. Cut the grilled chorizo into pieces and add to the bowl.
  7. When the chicken is cooked, cut it into pieces and add to the bowl.
  8. Halve the romaine lettuce, drizzle with olive oil, salt, and pepper, and grill briefly over the fire. Then chop and add to the bowl along with the boiled eggs.
  9. Add Caesar dressing, toss everything well, and plate up.
  10. Finish with Parmesan cheese and serve immediately.
